With its vast range of top-notch seafood, not to mention its potatoes, the so-called Godfather of British cuisine says that Jersey is the envy of his colleagues in France and the UK. In fact Mr Roux has so much faith in the unique gastronomical resources of the Island that he has just opened his eighth restaurant – at the new Grand Jersey. He is partnering new owners of the hotel Arvinder Walia and Gregor Ritchie. Last night he was in the kitchens of Tassili for its opening night giving ‘an old man’s advice where it is needed’ and helping the staff do what he has become famous for – cooking up a storm. But Mr Roux, who along with his equally famous brother Michel, was awarded an OBE in 2002, says he does not go into partnerships with restaurants as a matter of course. ‘I am very careful about which restaurants I put my name to,’ he says.
