A new floor has been added, and two luxury penthouses have been built with another three on the way.
The rooms were officially opened last Thursday by the chairman of the Jersey Tourist Board, Deputy Lyndon Farnham, and the hotel’s general manager, Claire Scott.
The extra floor, which was built over the previous winter, has a pitched roof.
It replaces a 1960s flat roof that the hotel’s owners, Robert and Mandy Colley, have long wanted to be rid of.
They have used the new space, which is linked to the old building by a lift and spiral staircase, to create a series of stylish one- and two-bedroom suites, each of them with a balcony overlooking the bay.
Even though the penthouses have only just opened, they are already booked over the summer and work is under way to complete the rest of the floor.
