Bread And Sea Water: The Island’s water shortage in the summer of 1976 posed no threat to Bird’s Bakery. Using a recipe drawn up in the Occupation, they baked bread with sea water!. “While we have flour and yeast, we can bake enough to supply all our customers”, said Mr Cyril Bird, proprietor of the bakers in New Street, which first opened its doors in 1895. He made his comments standing proudly behind rows of crisp loaves made without a drop of precious mains water. It was the threat of bread rationing which prompted his trip to the sea after unearthing the recipes used to overcome the salt shortage during the lean war years. “The water is collected in drums and carefully filtered”, he said, “It’s nice, a bit lighter than the usual loaf, but this is just an experiment in case things get really bad”.
