‘Jamie Oliver-style’ micro-bakery plan

Mr Dodge, the proprietor of Vienna Bakery, also intends to introduce a new baking technique that will enable the firm to produce fresh bread throughout the day.

The business, which is based at the Rue des Prés Trading Estate in Longueville, runs a shop in the Central Market.

Mr Dodge says that work is under way to move the shop to new premises across the market aisle, allowing Vienna to renovate the existing shop and turn it into a micro-bakery.

The firm’s main baking operation will stay at Rue des Prés.
