Finding a recipe to keep the customers happy

Steven Quin and Paul Heaton were working as head chef and manager respectively at Lido’s when the popular town eatery closed four months ago.

After a surprisingly brief search for likely premises in which to set up their own enterprise, the two men decided they would take on Drifters, a seafront restaurant that had itself closed its doors in November of last year.

The venture, which is now providing employment for five staff, marks the first time that Mr Quin and Mr Heaton have run their own business and they said they have discovered that offering good food in what is a thriving residential area of the Island is excellent for trade.
